Japanese restaurant, Teriyaki Don, to open in Merced
Teriyaki Don, a popular Japanese restaurant owned by Louie Ishihara which has a restaurant at 6731 N. Cedar Avenue in Fresno, is set to open its second location in Merced next week at 755 E. Yosemite Avenue, Suite H.
During an interview with the Times, Vaa Moua, Manager of the Fresno location, said, “We’ve been open for 19 years in Fresno. We offer Japanese cuisine. It’s more of a fast food type restaurant, and we have seating indoors and on the patio.”
She said, “The foods that most people order are our rice bowls, chicken teriyaki, and spicy crispy chicken.”
Describing the foods, she said, “The teriyaki chicken is grilled chicken thigh, but white meat is also available, and the spicy crispy chicken is a breaded chicken breast deep fried and topped with dried spice, teriyaki spice and sesame seed. Those are the two most popular.”
She continued, “Another dish we serve a lot of is salmon teriyaki, which is grilled salmon glazed with teriyaki sauce. It comes with rice and a small salad.”
For those who love hamburgers, the original homemade teriyaki burger will hit the spot.
Moua said, “We serve a teriyaki burger, which is a marinated 1/3 lb. beef patty glazed with teriyaki sauce and our own mayo we mix in, and it is topped with lettuce, onion, cucumber, tomatoes and avocado.”

Explaining how the development of a second restaurant came about, Moua said, “We’re really well-known for our homemade teriyaki sauce and our house dressing, and we wanted to spread our food items to a new area.”
She teased, “Our Fresno customers are a little jealous because they were wanting us to open more locations in Fresno.”
She continued, “When we were thinking about opening a new location, we wanted to choose a really nice area. The Bobcat Diner’s location came up for sale, and we liked the shopping center.”
“We didn’t need to do a lot of renovations of the building, mostly painting.”
When asked if there will be a grand opening, Moua said, “There is no grand opening scheduled, but we do have promotions. We expect to open on August 1. We’re going to be open every day from 11 a.m. to 9 p.m. Those interested in the restaurant’s promotions can keep up with that on the Instagram page for Teriyaki Don.”
